Smoked Beef Ribs

Beef Ribs can be smoked to perfection with little work. This recipe uses a dry rub, but it would be easy to add bbq sauce.

Instructions
Step 1
Trim tough fat, from meat side of ribs. Some fat can be left to render during smoking.
Step 2

Add rub or salt and pepper and pat to help stick.
Step 3
Allow ribs to come to room temperature, about 30 minutes
Step 4
Preheat smoker to 275 degrees
Step 5
Use Hickory pellets or wood chunks.
Step 6
Smoke ribs to 205 degrees,
Step 7
Can take 4 hours to 7 hours, depending on size of rack.
Step 8
Rest for 30 minutes or longer, to 145 degrees, before slicing.
