Step 1
Preheat oven to 300 degrees.
Step 2
In a large oven safe pot or Dutch oven heat 1 tablespoon of the oil and brown the Chuck Roast on all sides by turning it as it cooks. 3-4 minutes per side before turning to a new side.
Step 3
Set the Chuck Roast to the side on a plate.
Step 4
Add the remaining oil to the pot and heat up until shimmering.
Step 5
Add the onion and 1 teaspoon of salt to the pot, stir until onion starts to become soft.
Step 6
Add the paprika, and flour and stir well while continuing to cook for 2 minutes.
Step 7
Add the tomato paste and cook 1 more minute while continuing to stir.
Step 8
Add the wine and stir making sure to scrape any bits of roast off the bottom of the pot.
Step 9
Add the chicken broth, garlic and remaining salt.
Step 10
Place the Chuck Roast in the pot and cook for 2 hours. Add the carrots and potatoes and cook an additional 2 1/2 to 3 hours.
