Sausage and Mash slow cooked in Guinness

Instructions

Step 1
1️⃣ Brown the sausages
Step 2
Heat a pan over medium heat and lightly oil it.

Brown the sausages all over until well coloured (they don’t need to be cooked through).

Remove and set aside.

2️⃣ Soften the onions
Step 6
In the same pan, add the sliced onions (and garlic if using).

Cook for 5–7 minutes until softened and lightly golden.

3️⃣ Load the slow cooker

Add to the slow cooker:

Sausages
Step 11
Onions and garlic
Step 12
Carrots
Step 13
Guinness
Step 14
Brown sugar or honey

Worcestershire sauce

Bay leaf

Thyme

A few good grinds of black pepper

Do not add salt yet.

4️⃣ Slow cook

Cook on LOW for 6–7 hours

HIGH for 3–4 hours

5️⃣ Remove sausages

Once cooked, remove the sausages and keep them warm (covered).

6️⃣ Make the gravy

Pour the cooking liquid and vegetables into a saucepan.

Bring to a simmer and reduce by about one third.

Thicken using:

Cornflour slurry (stir in and simmer until thick), or

Butter + flour (cook briefly, then whisk in the liquid)

Taste and season with salt if needed.

7️⃣ Serve

Return sausages to the gravy and serve over buttery mash.

Add greens on the side if you like.
