Garlic and Herb Bread

This is a very easy garlic and herb bread made in a dutch oven. With just a few ingredients, you will have a delicious, crusty loaf of bread. The bread is mixed and kneaded in a KitchenAid stand mixer and is cooked in a Tramontina enameled dutch oven. You can use a raw cast iron dutch oven as well. The dutch oven gives it that crust on the outside leaving it soft on the inside.

Instructions
Prepare dough
Step 1
add flour to the mixing bowl, add salt and yeast on opposite sides of the bowl

Start to pour 110 degree warm water into the bowl and turn on the mixer. Mix for 5-10 minutes. If the dough looks dry, add 1 tbsp at a time of water until the dough comes together.

add the thyme and the roasted garlic and mix until the dough and all ingredients have come together. Add water or flour as needed.

The dough will be ready once it reaches a stiff ball state. Turn off the mixer and take out the dough, dust flour on a surface and knead the dough by folding it over on itself 8 timers.
Proofing and baking the loaf

Place the dough in a proofing container and let it rise at room temperature for 2-5 hours. Make sure it doubles in size.
Step 6
After it has doubled in size, punch the dough and roll the dough onto a floured surface. Knead the dough to bring it together and get the air out. Shape it into desired loaf shape.
Step 7
Place parchment paper or silicone liner in a dutch oven and place the dough ball on it to let it rise for another hour at room temperature.

After the dough has risen, score some lines on the bread to help it rise in the oven. Be creative. Let it rise for another 15 minutes. Start to pre-heat the oven at 450 degrees

After final rise, brush some olive oil on top of the bread. Be gentle to not deflate the bread. Place the lid on the dutch oven

Bake at 450 degrees for 30 minutes

After 30 minutes, remove the lid and bake at 375 for 10 minutes until golden brown.
