preferably beef skirt, cut into cubes

Step 1
* For the pastry, combine the plain flour and a pinch of salt in a bowl. Rub in 250g of butter until well combined. Gradually add the ice-cold water until the pastry forms elastic dough.
Step 2
* Wrap the pastry in cling film and let it rest in the fridge for at least 30 minutes.
Step 3
* For the filling, mix together the beef, diced potato, diced onion, and diced swede. Season with salt and pepper to taste.
Step 4
* Preheat the oven to 170°C (fan).
Step 5
* Dust your work surface with some flour and roll out the pastry(not too thin). Use a side plate with a diameter of 20cm to cut out pastry circles.
Step 6
* Place a portion of the filling closer to one side of each pastry circle. Add 2 pieces of butter on top of the filling. Fold the pastry circle over the filling, creating a half-moon shape. Seal and crimp the edges securely.
Step 7
* Transfer the pasties to a baking tray lined with parchment paper. Brush the tops with the egg wash (combine the egg yolk and milk).
Step 8
* Bake the pasties in the preheated oven for 50-55 minutes or until they are golden brown.
