Instructions
Step 1
Preheat oven to 400°.
Step 2
Grease muffin tray with butter.
(will use 16 muffin cups, a little more than 1 tray)
Step 3
BEAT: 1/2 stick butter, I/2 cup white sugar, 1 tablespoon Almond Extract, 1 egg yolk.
Step 4
Thinly slice 1 or 2 pears, into about 1/2" to 1" pieces.
Step 5
Lay out 1 box (2 sheets) pastry dough from the fridge/freezer.
Step 6
Cut pastry dough into squares and place 1 square in each muffin cup.
Step 7
Use basting brush to generously dab butter mixture on top of pastry pieces.
Step 8
Add a second square on top (opposite rotation to cover most of muffin cup) and again dab butter mixture on top.
Step 9
Top with cut pear, sprinkle with sea salt.
Step 10
Warm a dollop of butter mixture for about 10 seconds in small microwavable bowl, add 1/2 cup of sliced almonds and mix gently. Place covered almonds on top of pear. Sprinkle with cinnamon.
Step 11
Bake for 30-40 mins at 400°. Gently remove pastries from muffin tin and let cool.
