Red or White - inexpensive Chianti works great, substitute wine with beef or chicken stock - 1 C water with bouillon cube is fine

28 ozcan of crushed tomatoes
15 ozDiced Tomatoes

2 tspbrown sugar
2 tspworcestershire sauce
1 tspdried oregano
½ tspdried basil
½ tspdried parsley
½ tspdried rosemary
½ tspdried thyme
¼ cgrated parmesan

¼ teaspoonBlack Pepper
Freshly-ground, to taste
¼ tspCrushed Red Pepper

Instructions
Step 1
First 12 ingredients plus salt and pepper are absolutely necessary for genuine Bolognese Sauce. The rest of the spices are optional in whatever combinations you choose to switch things up.
Step 2
MUST simmer for a minimum of 2.5 hrs covered and 20-30 min Uncovered to thicken.
Step 3
Use very thick for Lasagna or thin out with pasta water to make pasta of choice.
