36g fat free greek yoghurt
Instructions
Step 1
Mix yoghurt & pesto together
Step 2
Butterfly the chicken (cut from thick side to thin side but dont cut all way through, open up & then flatten by hitting with rolling pin)
Step 3
Put in the middle the mozzarella & small amount of pesto yoghurt sauce
Step 4
Fold chicken back over & wrap prosciutto round the chicken
Step 5
Fry chicken either side to brown it for 10 mins & then put in oven with tinfoil over it - around 30 mins
Step 6
When chicken half way through cooking in oven - boil the broccoli
Step 7
Finally microve lentils & add asparagus to boiling pot with broccoli
Step 8
Plate up: lentils at bottom, top with some veggies, chicken on top of that, 2 asparagus spears on top of chicken then a dollop of pesto yoghurt sauce on very top
