Ingredients
3 servings
3boneless skinless chicken breasts
1 tablespoonolive oil
1 teaspoondried oregano
salt
to taste
pepper
to taste
4 cupsmixed greens
lettuce, spinach, arugula
1 cupcherry tomatoes
halved
1cucumber
sliced
0.5red onion
thinly sliced
½ cupKalamata olives
pitted
½ cupfeta cheese
crumbled
Greek salad dressing
store-bought or homemade
Instructions
Step 1
Brush chicken breasts with olive oil and season with dried oregano, salt, and pepper.
Step 2
Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-8 minutes per side or until cooked through.
Step 3
Let the chicken rest for a few minutes before slicing it into strips.
Step 4
In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber slices, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
Step 5
Add the grilled chicken strips on top of the salad.
Step 6
Drizzle Greek salad dressing over the salad and toss to combine.
Step 7
Serve immediately.
