Delicious and creamy eggplant spread - Baba Ganoush!
You can choose to follow the original recipe in the video or mine - I adjusted it to resuce the oil/fat content a bit - still very creamy and delish. :)
Enjoy with toast or on crackers!

Instructions
Step 1
1. Set your oven to 230C.

2. Cut the eggplants lengthwise and rub them in oil. Roast the eggplant for 35 to 40 minutes
Step 3
3. Scoop out the flesh and place it in a bowl along with the rest of the . Use a fork to mash and mix all the together.
Step 4
4. Transfer the baba ganoush to a serving plate and drizzle olive oil, cilantro and a pinch of smoked paprika on top. Enjoy!
