Ingredients

2 Tolive oil
1onion
small dice
2carrots
small dice
2 Ttomato paste
2garlic cloves
minced
2 Tred wine vinegar
½ cupbrown lentils
3 cupsbeef broth
1 cupwater
24 ozPass
4 cupsgreen cabbage
roughly chopped
1 Tsmoked paprika
½ tspblack pepper
¼ tspcayenne pepper
2 Tmaple syrup
1 Tvegan Worcestershire sauce
¼ cupparsley
fresh, chopped, optional
1 cupWhite Rice
dried, or desired grain
Instructions
Step 1
✅ In a large heavy bottomed pot, on stovetop heat oil on med heat. When warmed add onion & carrots. Season with kosher salt/pepper, till onion is translucent 5-7 min
Step 2
✅Add tomato paste, mix to coat onions & carrots, when it turns dark red/caramelized 2-3 min. Deglaze pot with vinegar, scraping bottom
Step 3
✅ Add broth, water, passata, cabbage, lentils, maple syrup & seasoning. Bring to a boil on high heat, then lower heat to a slow simmer. Place lid slightly ajar, and simmer till lentils become tender & flavors meld 25-30 min. Add Worcestershire sauce. Adjust seasoning to taste
Step 4
✅Meanwhile, cook rice according to package directions
Step 5
✅ To serve: Ladle soup into bowl, & add desired amount of rice.Top with fresh herbs & serve with crusty bread
