Step 1
Boil the Spaghetti: Begin by bringing a large pot of salted water to a boil. Cook the spaghetti until it's al dente according to the package instructions. Remember to reserve 1/2 cup of the pasta cooking water before draining.

Cook the Pancetta/Bacon: While the spaghetti is cooking, take a large skillet and set it over medium heat. Add the diced pancetta or bacon and cook it until it becomes crispy and golden brown. Remove the pancetta from the skillet and set it aside while keeping the rendered fat in the skillet.
Step 3
Sauté the Garlic: In the same skillet with the rendered fat, lower the heat to low and add the minced garlic. Sauté the garlic for about 1 minute, stirring constantly. Make sure it doesn't burn.
Step 4
Prepare the Sauce: In a medium-sized bowl, whisk together the eggs, Pecorino Romano cheese, Parmesan cheese, and a generous amount of freshly ground black pepper.
Step 5
Combine Everything: Return the cooked spaghetti to the pot (off the heat). Pour the egg and cheese mixture over the spaghetti, tossing quickly to coat the pasta evenly. The heat from the pasta will cook the eggs, creating a creamy sauce. If the mixture seems too thick, gradually add the reserved pasta cooking water, a tablespoon at a time, until it reaches your desired consistency.
Step 6
Add the Pancetta/Bacon: Put the cooked pancetta or bacon back into the pasta and toss everything together. Pour the rendered fat and garlic from the skillet over the pasta to infuse it with flavor, and toss again to distribute the flavors.
Step 7
Season and Garnish: Taste and adjust the seasoning with salt if needed. Be mindful of the saltiness from the pancetta or bacon and cheeses. If desired, garnish your Spaghetti alla Carbonara with chopped parsley.
