Sweet potato cottage pie

Instructions

Step 1
Preheat the oven to 200°C/gas mark 6
Step 2
Boil the sweet potatoes for 10 minutes
Step 3
Meanwhile, fry the onion and mince in a little oil until browned
Step 4
Drain the fat from the saucepan, add the beef stock, and cook for five minutes until the vegetables have softened and the sauce has thickened. NOTE - You do not need to drain the fat if 5% fat mince is used. Alternatively, you can create the beef stock by adding salt, pepper, paprika, turmeric, oregan, and basil to create a nice flavour
Step 5
Add the vegetables, gravy granules, and other seasoning and stir well. NOTE - Put 2 tsp of gravy power and a little cold water into a cup and then stir. Pour this into the pan. If there is too much liquid, add cornflour
Step 6
Leave the mince to simmer. Drain the potatoes, add milk, and mash. NOTE - You can also add butter to the potatoes
Step 7
Put the mince mixture into an ovenproof dish
Step 8
Cover with the mash and bake in the oven until it is lightly browned
