750gbeef mince
1onion
chopped
3garlic cloves
chopped
1carrot
finely chopped
200mlred wine
500mlbeef stock
2 Tbsptomato puree
2 Tbspworcestershire sauce
rosemary
thyme
1 Tbspolive oil
salt
pepper
Mash Topping
Instructions
Step 1
Heat olive oil in a large pan, add onion & garlic, cook for 5-7 mins over a low heat until softened but not coloured.
Step 2
Add carrot and cook for 5 mins over medium heat.
Step 3
Add in mince, season, cook over high heat until coloured. Break up the mince regularly with a wooden spoon to avoid lumps.
Step 4
Pour in Worcestershire sauce & tomato puree, mix through. Add wine, cook over high heat to let alcohol evaporate.
Step 5
Pour in stock, add herbs, season and bring to the boil.
Step 6
Reduce heat and simmer for 20-30 mins until sauce has thickened.
Step 7
Peel and cook potatoes in salted boiling water until soft. Drain and put through potato ricer if you have one.
Step 8
Add butter, milk, parmesan, egg yolk, salt and pepper. Mix together until nice & creamy.
Step 9
Grease an oven proof dish with butter and pour in meat sauce.
Step 10
Spread mash on top, sprinkle with parmesan and place little knobs of butter all over.
Step 11
Cook in the oven for 20-25 mins until the top is crispy and bubbling.
