Instructions
Step 1
Saute onion, celery and capsicum in a large pot until soft.
Step 2
Add ginger and turmeric. Stir until fragrant.
Step 3
Add hearty vegetable soup mix and 1.5L of boiling water and bring to the boil.
Step 4
Add carrots and pumpkin.
Step 5
Add chicken. Reduce to a simmer, cook lid on for 30min stirring occasionally.
Step 6
Blend corn, cashews and kale/spinach to a creamy texture. Add to the soup for the last 10mins of cooking.
Step 7
Add extra corn and mushrooms.
