Instructions

Step 1
Peel potatoes then boil or steam until fork tender . Let them air fry to remove excess moisture then mash through a ricer or mash and push through a sieve to get out any lumps
Step 2
Add a pinch of salt pepper and nutmeg the egg yolks and potato starch and mix to a dough
Step 3
Roll into balls then put into hot water and cook covered on low heat for about 12- 15 minutes ( high heat will move them around too much and they will fall apart )
Step 4
Add butter a bashed clove of garlic rosemary and thyme to a pan then cook until the butter goes brown . Strain the herbs out and reserve the sauce
Step 5
Add breadcrumbs into the same pan and toast until nice and golden then serve dumplings with the butter sauce and breadcrumbs on top and enjoy
