Step 1
Peel floury potatoes then cook in generously salted water until fork tender . Drain the water and then cook on low to let the rest of the moisture evaporate . If you have A potato ricer use it on the potatoes or else just mash them with a masher . Add 2 eggs melted butter salt pepper and nutmeg mix then pass through a sieve if you want then very smooth. Then add the cornstarch and mix until it’s all absorbed .

Step 2
In a bowl add heaped tablespoons of ricotta grated cheddar chopped scallions dill salt and pepper then mix this is the filling .
Step 3
Bring a pot of salted water to a boil then wet your hands and make big balls of dough from the potatoes it should make 8 large ones . Push down on the centre making a little hole then get a large teaspoon of filling put it in the middle then close the dough around it and re roll into a ball . Place the balls into the boiling water and when they rise to the surface cover with a lid and cook on medium low heat for 20 minutes . They should not be on a rolling boil . Once cooked cover in your favorite butter herb sauce and enjoy
