Step 1
Chop up garlic, ginger and fresh chilli

Prepare palm sugar or brown sugar
Step 3
Pat the salmon dry and sprinkle salt

Pan on high heat with oil and fry salmon until 50% cooked (2mins)
Step 5
Remove salmon from pan and sauté the ginger garlic and Chillie. Add in 1.5 tablespoons of red curry paste then add coconut cream.
Step 6
Add in sugar and lime zest and lime juice, few splashes of fish sauce and salt.
Step 7
Add more coconut milk and return salmon to the pan. Ladle coconut mixture of salmon and cover with lid and cook for a further 4min. Sprinkle with coriander and spring onion.
