This soup will blow you away. Garlic, cilantro, stale bread, and a poached egg. So simple but so good! This is based on a Portuguese dish that is traditionally made with salt cod broth, but I couldn’t find it, so I made it with chicken stock and wow! Takes no time at all and uses just a few humble ingredients. Enjoy!

Step 1
In a small pot, boil your chicken stock and carefully poach your eggs until soft.
Step 2
In a mortar and pestle, grind your garlic, olive oil, and cilantro into a paste, then add salt and continue to grind until it is as fine as you can get it.
Step 3
In a bowl, take a spoonful of your cilantro paste (or more depending on how strong you want it), and add in your chicken broth. Top with a slice of bread, a poached egg, and some more olive oil. Enjoy!
