Step 1
Prepare the stuffing: In a small frying pan over medium heat, heat olive oil. Add diced facon-pastrami; toss until crispy, 4-6 minutes. Place into a bowl and then in the same frying pan, sauté diced onion over medium-high heat until golden, 8-10 minutes, stirring constantly. Remove from heat; combine with beef fry. Set aside. Prepare the burgers: In a large bowl, combine ground beef, panko crumbs, barbecue sauce, grated onion, egg yolks, salt, and pepper. To form uniform patties, line the inside of a 4-inch jar lid with a small piece of plastic wrap. Press a small handful of ground beef mixture into the lid. Press down and level the mixture, then turn out onto prepared baking sheet. Place 1 tablespoon stuffing mixture onto the center of each patty. Fold the outer rim of the patty over the filling, pressing to close the opening. Place seam-side down on the baking sheet. Coat grill with cooking spray; preheat grill. Grill patties for approximately 3 minutes, then flip and grill for approximately 3 minutes on the second side. Alternatively, grill on the stovetop in a grill pan coated with cooking spray or broil in a preheated oven on a grill pan coated with cooking spray. Assemble with your favorite toppings & sauces of choice (I love ranch). Serve & Enjoy!
