Ingredients
6 servings
6bell peppers
any color
4 tablespoonsolive oil
plus more for drizzling
8 ouncesground turkey
1shallot
finely diced
2cloves garlic
chopped
1zucchini
medium, finely diced
2 tablespoonstomato paste
0.5 canfire roasted diced tomatoes
0.5 candiced tomatoes
regular
½ cupspaghetti sauce
¼ cupwater
tin foil
red pepper flakes
to taste
1 cupwhite rice
beef broth
pepper Jack cheese
Sliced
italian seasoning
to taste
garlic powder
to taste
salt
to taste
pepper
to taste
parsley
to taste
shredded mexican cheese
shredded mozzarella cheese
Instructions
Step 1
Preheat oven to 350
Step 2
Cook rice in beef broth
Step 3
Cut the tops off the peppers, set aside. Scoop out the seeds and as much of the membrane as you can. Place the peppers cut-side up in a baking dish just large enough to hold them upright.
Step 4
Heat 2 tablespoons of the olive oil in a large skillet over medium-high heat. Add the ground Turkey, season with salt and pepper and cook, breaking up the lumps, until the meat is cooked through and just beginning to brown, 8 to 10 minutes. Remove and put into a bowl.
Step 5
Add a drizzle of olive oil to pan and cook chopped shallots and garlic until fragrant
Step 6
Add zucchini, stir and cook until medium softened

Add tomatoes and tomato paste

Add salt and a pinch or 2 of red pepper flakes. Add parsley, Italian seasoning and garlic powder. Mix well and then add to bowl with turkey meat

Add half cup of Mexican cheese and half a cup of mozzarella
Step 10
Add spaghetti sauce to mixture. Mix all ingredients together
Step 11
Add cooked rice to meat mixture
Step 12
Line sliced pepper Jack cheese inside bell peppers, only about 1/2 a slice

Stuff bell peppers with meat mixture
Step 14
Top with a little Mexican cheese
Step 15
Place tops of bell peppers back on top

Drizzle peppers with olive oil

Add water to dish and cover with foil
Step 18
Bake covered for 20-30 minutes
Step 19
Uncover and cook for another 10-20 minutes until cheese is melted and peppers and lightly browned
