Instructions
Step 1
Add flour, cornstarch, salt, and baking powder to bowl. Whisk, add beer. Let sit.
Step 2
Cut fish into chunks, dry and season with salt and pepper. Cut potatoes into fries.
Step 3
Pour peanut oil into cast iron pan. Add potatoes and then turn on heat.
Step 4
Cook for seven minutes to rolling boil. Then cook for 15 more minutes.
Step 5
Remove potatoes but do not salt, you will add them back.
Step 6
Get oil back to 375 degrees. Dip fish in batter and then into oil for four minutes. Flip and do four minutes on the other side. Remove.
Step 7
Add potatoes back to boiling oil for one more minute.
