Cast iron seared steak over parmesan crusted smashed potatoes

Instructions

Step 1
Set out a baking sheet and cover it with aluminum foil for the potatoes to sit on after cooking. Set out another sheet of aluminum foil to place the steaks on to prep them. Fold the edges of this foil up to create little walls to hold the salt and pepper in while you season the steaks. Set out a cutting board to place the steaks on after they have been cooked
Step 2
Place the steaks on a sheet of aluminum foil and cover generously with salt and pepper, then flip the steaks over and cover the other side generously with salt and pepper. Leave to rest and come to room temperature
Step 3
Rinse potatoes and place them in a large pot. Fill water to cover the potatoes about an inch deep and add salt
Step 4
Boil the potatoes for about 5-10 minutes or until the potatoes are fork tender
Step 5
Remove potatoes from heat and drain then set aside. Rub 1/2 Tbsp of butter over the potatoes
Step 6
Add 1/2 Tbsp of butter and the olive oil to a cast iron skillet and set it on medium high heat until the butter just begins to brown and sizzle
Step 7
Place the steaks in the skillet and let sear for 2 minutes, then flip and let sear for another 2 minutes
Step 8
Flip the steaks again then add the remaining 2 Tbsp of butter, rosemary, thyme and garlic to the skillet
Step 9
As the butter melts, use a spoon to baste the steaks with the melted butter for 1.5 minutes, then flip the steaks and baste for another 1.5 minutes
Step 10
Remove the steaks from the skillet once they reach 135°F and leave to rest on a cutting board for 5 minutes. They should continue to heat to around 140°F for a medium steak
Step 11
Add the potatoes to the skillet and use a fork to gently smash them to a roughly even thickness. Sprinkle with parmesan cheese and let sit for 30 seconds, then flip and sprinkle with parmesan cheese and let sit for another 30 seconds. Flip the potatoes again to ensure they are golden brown then remove from heat and set on a baking sheet covered in aluminum foil
Step 12
Plate several potatoes and then cut the steak along the bias and set over the potatoes
