Instructions

Step 1
1. Rinse the quinoa thoroughly in a fine-mesh sieve under cold water to remove any bitterness.

2. In a saucepan, combine the rinsed quinoa and 2 cups of water. Bring it to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed. Remove it from heat and fluff it with a fork. Allow it to cool to room temperature.

3. In a large mixing bowl, combine the cooled quinoa, chopped basil, halved cherry tomatoes, diced cucumber, and crumbled feta cheese.
