Instructions
Step 1
Cut liver into small pieces. Place in shallow pan. Add apple cider vinegar and enough water to cover the meat. Allow to marinate 30-90 minutes under refrigeration
Step 2
Combine coconut flour, vital wheat gluten, paprika, garlic and black pepper.
Step 3
Preheat skillet with about 1/2 of the oil on medium heat.
Step 4
Rinse liver and pat dry with paper towels. Dredge in flour mixture and place in hot oil. Cook for 4-6 minutes until browned. Flip and cook another 4-6 minutes. Be careful not to overcook. Place on paper towels to drain. Repeat with remaining pieces of liver adding additional oil to the skillet as needed.
Step 5
After liver is cooked, there should be a little bit of oil left in the pan along with some of the flour mixture. Add the onions and cook over medium heat until caramelized.
Step 6
Top liver with onions and enjoy!
