Instructions
Step 1
If creating from dry beans they must be prepared. Soak 1 cup black beans overnight. Boil for 1 hour. When tender, use colander to separate beans from water. Place beans in large bowl.
Step 2
In a large skillet, heat 1 tablespoon oil. Cook the onions, celery, and carrots for 5 to 7 minutes, or until the onions are translucent. Add the minced garlic and cook for another 30 seconds. Let cool.
Step 3
While the vegetables are cooling, add the old-fashioned oats to a food processor. Pulse until mostly pulverized, about 1 minute. You can leave a few bigger pieces for texture.
Step 4
In a large bowl, mash the black beans with a potato masher or large fork. Again, you can leave a few bigger pieces for texture.
Step 5
Combine remaining olive oil, vegetables, oats, and black beans in bowl. Mix thoroughly.
Step 6
Form the mixture into 6 equal-sized patties. Optional: make 12 patties if a smaller patty is desired.
Step 7
Add more oil to the skillet, and fry the patties until crispy, about 5 minutes on each side.
Step 8
Approximately 152g per patty.
