Roasted Zucchini and Mushrooms with Feta

For added ease, skip the serving bowl and serve right off the baking sheet. Simply add a few greens or fresh herbs to make it look pretty. Yield: 4-6 side dish servings or 3-4 meatless main dish servings

Instructions

Step 1
Preheat the air fryer to 425 degrees F.
Step 2
Sliced the zucchini length wise and then chop each half into about 1" half moon pieces. Cut the mushrooms in half (or quarters if large). Cut the onion in half, and then slice from root to tip end. Separate the slices. Place all the veggies in a large mixing bowl.
Step 3
Mix all of the seasonings, oil, and vinegar together in a bowl. Add the chopped zucchini and mushrooms and toss to evenly coat (using your clean hands makes this easy).
Step 4
Spread the veggies into an even layer in the air fryer. Roast for 20 minutes, and then stir and redistribute the vegetables. Continue to roast until most all the moisture is gone and the zucchini and mushrooms are beginning to brown, 15-20 minutes more.**
Step 5
Sprinkle the feta over all and then broil for a minute or two, watching very carefully to avoid burning, or until the vegetables are lightly golden in spots.
Step 6
Remove from the oven, sprinkle with the chopped herbs, and enjoy. Leftovers improve with age and are delicious cold or gently warmed.
