Here is an unusually tasty oatmeal cookie-a real delight for cardamom lovers. If you're not crazy about cardamom, reduce the amount in the recipe to ½ teaspoon or substitute ½ teaspoon of allspice.
Most low-fat cookies are not as crisp as their traditional higher-fat cousins. At first we tried various techniques to produce crisper low-fat cookies, but finally we saw the wisdom in accepting this cookie just as it is. It's moist with apple butter, delicious, and chewy-why try to make it into something else?
The best way to store low-fat cookies is in layers separated by wax paper or plastic wrap in an airtight container in the freezer. Defrost at room temperature for about 20 minutes before serving. If stored at room temperature in a closed container, the cookies stick together and become gooey, but if left in the open, they become stale. We recommend the freezing trick.

Step 1
Preheat the oven to 350°.
Line a baking sheet with parchment paper or prepare it with a light coating of cooking spray or oil.
In a large bowl, mix together the apple butter, oil, egg, vanilla, and brown sugar until smooth. Stir in the raisins, if using.
In a separate bowl mix together the flour, baking soda, salt,
cinnamon, and cardamom or allspice. Stir in the oats. Add the dry ingredients to the wet ingredients and mix until well blended.
Drop the batter by the tablespoonful about 3 inches apart onto the baking sheet. Bake for about 15 minutes, until lightly browned. Transfer to a wire rack to cool.
