Ingredients

1.5 poundsred skin potatoes
washed and sliced in half
½ cupolive oil
divided
2 tablespoonssea salt
divided
2 tablespoonsbutter
divided
½ teaspooncrushed red pepper
adjust to taste
1 teaspoongarlic powder
½ teaspoonblack pepper
1 teaspoondried parsley flakes
or fresh parsley for garnish
1 cupColby Jack cheese
shredded
1 cupmozzarella cheese
shredded
½ cupparmesan cheese
grated
aluminum foil
Instructions
Step 1
Place the washed and halved red skin potatoes in a large boiling pot with enough water to cover them. Add 1 tablespoon of sea salt and 1/4 cup of olive oil to the pot. Boil the potatoes for about 20 minutes until they are soft but still slightly firm. Drain and set aside.
Step 2
In a medium-size skillet, heat 2-3 tablespoons of olive oil and 1-2 tablespoons of butter over low to medium heat until the butter is melted and the mixture is sizzling.
Step 3
Add the boiled red skin potatoes to the skillet. Allow them to sear for 10-15 minutes, turning occasionally, until they are nicely browned.
Step 4
Season the seared potatoes with the remaining sea salt, crushed red pepper, garlic powder, black pepper, and dried parsley flakes. Add more butter and olive oil to prevent sticking, as needed.
Step 5
Sprinkle the shredded Colby & Jack cheese, mozzarella cheese, and parmesan cheese evenly over the potatoes.
Step 6
Cover the skillet with aluminum foil to help the cheese melt evenly. Allow it to melt for a few minutes.
Step 7
Once the cheese is melted, turn off the stove, remove the foil, and garnish with fresh parsley if desired.
