4chicken breasts
diced
1 cupTikka Masala Curry Spice Paste
4 Tbspolive oil
divided
2cloves garlic
minced
0.5red pepper
diced
0.5yellow pepper
diced
1red onion
diced
¼ cupred wine
1 jartomato sauce
for pasta
1 Tbspbasil
3 ½ cupspenne
cooked
2 cupsarugula
chopped
1 tspchives
chopped
2 Tbspolives
pitted and sliced
salt
to taste
chile flakes
Parmesan
grated, garnish
Instructions
Step 1
Marinate the chicken in the Patak’s® Tikka Masala Curry Spice Paste for at least 20 min in the refrigerator.
Step 2
Heat 2 tbsp of oil in a pan and add the garlic, peppers and onions.
Step 3
Sauté for 2 min and add the marinated chicken.
Step 4
Cook for about 5 min or until cooked through.
Step 5
Add the red wine to deglaze the pan.
Step 6
Pour the pasta sauce in the pan and add the basil.
Step 7
Bring to a boil, reduce the heat and let simmer for 5 min.
Step 8
Toss in the cooked pasta, arugula, chives and olives.
Step 9
Season with salt and chile flakes.
Step 10
Garnish with Parmesan.
