This is as a lovely midweek dinner and could definitely replace the takeaway at the weekend too….

Instructions
Step 1
Add marinade ingredients to a bowl but only use 60g of the coconut milk, mix well and set aside.
Step 2
Cut chicken into cubes and place in a large bowl, add a third of the marinade and leave to marinate for 30 mins. Place wooden sticks in water during this time.
Step 3
Add chicken cubes to skewers and cook in the Airfryer for 15 mins depending on power of Airfryer at 200C.
Step 4
In a small pot add remaining marinade and pour in remaining coconut milk. Bring to a simmer and remove.
Step 5
Serve skewers with rice, cucumber salad, extra satay sauce on top with chilli, spring onion, crushed peanuts and coriander.
