For the marinade
2 lbsboneless chicken
small pieces
1 tspgreen chilli paste
2 3 green chillis chopped
2 tspginger-garlic paste
½ tspturmeric powder
1 tspred chilli powder
1 Tbsptandoori powder
1 Tbsptomato purée
salt
to taste
For the gravy
Instructions
Step 1
Marinate the boneless chicken pieces with ginger and garlic paste, green chillies, red chilli powder, turmeric, salt, tandoori powder and tomato purée.
Step 2
Heat oil in a pan and add a stick of cinnamon, 2 cloves and 2 cardamom pods. Then add tinned tomatoes. Cook the tomatoes until all the water has evaporated.
Step 3
Add ginger and garlic paste, green chillies, red chilli powder, turmeric, tandoori powder, Garam Masala and salt to taste. Once all the spices are mixed, add the marinated chicken and let it cook.
Step 4
Add the cashew nuts paste (soak cashew nuts in hot water 30mins prior to start cooking) and mix well.
Step 5
Once the chicken is cooked add the double cream and let it cook on a slow heat for 5 mins. Add a teaspoon of sugar at this stage to enhance the taste.
Step 6
Switch off the flame after 5 mins and garnish with coriander! Enjoy it with chapatti or naan 😃
