Instructions
Step 1
Put the mayonnaise, yogurt, curry powder, mango chutney, cider vinegar, sugar and lemon juice into a bowl. Stir to combine everything together.
Step 2
In a separate bowl, add the chickpeas. Use a large fork or potato masher to crush the chickpeas, leaving some whole to add texture.
Step 3
Finely chop the coriander. Add to the sauce mix along with the crushed chickpeas, apricots, sultanas, salt and pepper and cayenne pepper to taste. Stir everything together.
Step 4
Store in an airtight container in the fridge for up to two days.
