Instructions

Step 1
For the Grilled Pork (Nem Nuong):

In a bowl, combine the ground pork, minced garlic, sugar, fish sauce, soy sauce, black pepper, salt, and baking powder. Mix well until the ingredients are fully incorporated.

Take small portions of the pork mixture and shape them into small sausage-like patties.

Thread the pork patties onto the soaked bamboo skewers.

Preheat a grill or grill pan over medium-high heat. Grill the pork skewers for about 3-4 minutes on each side or until they are cooked through and have a nice char.

Remove the grilled pork skewers from the heat and let them rest for a few minutes.

For Assembling the Spring Rolls (Cuon):

Fill a shallow dish with warm water. Dip one rice paper sheet into the water for a few seconds until it becomes pliable. Lay it flat on a clean surface.

Place a lettuce leaf on the lower third of the rice paper sheet, leaving some space at the edges.

Add a small handful of cooked rice vermicelli noodles on top of the lettuce.

Add a few slices of cucumber, fresh mint leaves, cilantro leaves, and any optional ingredients you like, such as bean sprouts and carrot matchsticks.

Place one grilled pork skewer on top of the herbs and vegetables.

Fold the sides of the rice paper sheet over the filling, then fold the bottom part up and roll tightly into a spring roll.

Repeat the process with the remaining ingredients.

For the Dipping Sauce:

In a small bowl, whisk together hoisin sauce, peanut butter, water, soy sauce, rice vinegar, and chili garlic sauce until smooth.
