German Curd Donuts - Quark Ballchen

Every time I walk by a German bakery and smell these I have to have them. With this recipe you can make these fluffy donut-y little bites of heaven easily at home !

Step 1
In bowl sift the flour and baking powder then add the sugar a pinch of salt and whisk together . If you don’t have access to vanilla sugar you can just add regular sugar and add 1 tsp vanilla extract to the wet ingredients

Step 2
In another bowl whisk the eggs then add the quark and beat until smooth . If you can’t buy quark/ dry curd in your area sub Greek yogurt .

Add the dry to the wet ingredients and whisk until combined . The dough should be thick and sticky .
Step 4
Heat oil on in a pan to 170 c 340 f . Oil an ice cream scoop and take scoop fills then drop carefully into the oil . Do about 4 at a time . Keep them moving then flip over once one side is golden . Cook for about seven minutes moving constantly . When doing the next batch keep an eye on the oil temp. If it’s too hot lower the heat so the inside cooks evenly . Once cooked drain on paper towels then dust with powder sugar or cinnamon sugar . Enjoy
