Preheat the oven to 350

In a large mixing bowl, whisk the eggs

Make the Muffin batter by mixing together with the eggs: Then add 3/4 cup almond flour, 1/4 cup + 1 Tablespoon coconut flour, 1/2 cup maple syrup, 1/4 cup applesauce, 1/4 cup peanut butter, 1 teaspoon baking power, 1 teaspoon cinnamon, 1 teaspoon vanilla, and 1 apple diced.

Make the Streusel topping by combing the following in a separate bowl: 1/4 cup coconut sugar, 1/4 cup almond flour, 1/4 cup pecans, 1 teaspoon cinnamon, sprinkle of salt, 3 tablespoons applesauce.

Fill the muffin cups about 2/3 full with muffin batter and top it off with a spoonful of Streusel topping.
