Instructions
Step 1
Beat 200g sugar and eggs well in a food processor until thick and lemon-coloured.
Step 2
Add the Apricot jam
Step 3
Sieve together the flour, bicarbonate of soda and salt
Step 4
Melt 15g butter and add the vinegar.
Step 5
Add this butter/vinegar mixture and the milk to the egg mixture alternately with the flour. Beat well
Step 6
Bake in a covered oven-proof dish at 180°C for 45 minutes.
Step 7
Melt together 200ml cream, 100g butter, 150g sugar and 100ml hot water, and pour over the pudding as it comes out of the oven.
Step 8
Leave to stand for 5-10 minutes.
Step 9
Serve with cream and/or custard
