Chocolate Coconut Biscuit (Romany Creams)

A South African chocolate coconut biscuit, two biscuits sandwiched with chocolate in the centre or dipped in chocolate and decorated. Perfect for Eid and still so good even if you’re not the biggest fan of coconut like me!

Instructions

Firstly, cream softened butter and sugar till white and fluffy (5-10 minutes).

Then sift in the baking powder, cocoa powder and coconut.

Then add your flour. First add about 380g (2 and 1/2 cups) and see if the dough comes together (shouldn’t be too soft to roll and should start pulling away from the sides of a stand mixer). Add a little more at a time if necessary.

Wrap in cling film and refrigerate for an hour.

Once chilled preheat your oven to 180C and roll out the dough on a floured work surface with a floured rolling pin or between two pieces of plastic wrap (much easier!). Scrape with a fork vertically and horizontally to create a textured biscuit. The dough might look a mess at this stage but will lose some texture when baking so create a good amount of texture with your fork.

Cool completely and add melted chocolate to the flat side of half of the biscuits. Sandwich and dust with edible glitter (optional).
