Baked Gnocchi with Spinach White Beans and Sausage

I’ve been talking a lot about where I draw my inspiration from... its comes from so many sources. This one was easy👌 I read an email from with an article titled, “Every Casserole Recipe you’ll ever need” I opened the article, saw this recipe and realized I had everything I needed. The End 👊💪 . . . Baked Gnocchi with Spinach White Beans and Sausage . . . 2 tbls olive oil 1 1/2 lb Italian sausage, casings removed 1 onion 4 cloves garlic Salt and pepper 4 cups marinara sauce 1 tsp dried oregano 5 basil leaves 2 cups mozzarella cheese, sliced or shredded 1/4 cup grated Parmesan cheese 2 (15 oz) cans white beans drained and rinsed 5 oz baby spinach 1/4 cup fresh chopped parsley 1 pound refrigerated, shelf stable, or frozen gnocchi (I used Trader Joe’s brand) ( I also used 2 packages) Preheat the oven to 425F. Heat oil in a large pot over medium heat until hot. Add the sausage and break up with a wooden spoon. Cook until there is no more pink. Add onion and garlic and cook until tender, 5 more minutes. Season with salt, pepper and chili flakes. Add the marinara, oregano and basil and bring to a boil. Reduce and let simmer 20 minutes. Check for seasoning. Remove the pot from the stovetop. Add spinach, beans, parsley and gnocchis. Pour into a casserole dish. Top with mozzarella and Parmesan. Bake until it is bubbling and golden, 30 to 35 minutes. Garnish with additional parsley . . .

Instructions

Step 1
Preheat the oven to 425F.
Step 2
Heat oil in a large pot over medium heat until hot. Add the sausage and break up with a wooden spoon. Cook until there is no more pink. Add onion and garlic and cook until tender, 5 more minutes. Season with salt, pepper and chili flakes.
Step 3
Add the marinara, oregano and basil and bring to a boil. Reduce and let simmer 20 minutes. Check for seasoning.
Step 4
Remove the pot from the stovetop. Add spinach, beans, parsley and gnocchis. Pour into a casserole dish. Top with mozzarella and Parmesan.
Step 5
Bake until it is bubbling and golden, 30 to 35 minutes. Garnish with additional parsley
