Bake frozen mahi mahi filets at 450 degrees for 30 minutes. Cook brown rice in vegetable broth until sticky, add pepper, salt, and fresh basil and let simmer in broth. Diced sweet peppers, tomato, and green onions and mix with olive oil, pepper, salt, and fresh basil. Top mahi mahi with sweet pepper relish and serve over top your brown rice risotto.
