Instructions
Step 1
Preheat oven to 400 degrees with racks in upper and lower thirds. Arrange squash slices on 2 wire racks set over rimmed baking sheets. Generously season each side with salt; let stand 20 minutes.
Step 2
Pat each slice dry with a paper towel. Clean sheets and wipe dry; rearrange slices on them. Spray both sides with cooking spray, season with pepper, and roast until caramelized and tender, about 30 to 40 minutes.
Step 3
Heat cooking spray over medium heat in a large saucepan. Add onion and cook until tender.
Step 4
Add the chicken, salt and pepper to the onion and cook until no longer pink.
Step 5
Remove squash from oven when easily pierced with a fork. Peel skin away; separate strands into long "noodles."
Step 6
Add squash, tomatoes and cheese to chicken and onions. Toss in the basil and serve.
