Combine water, yeast, sugar, and 391 g of bread flour in the bowl of a stand mixer. Mix on low speed with the dough hook attachment for 3-4 minutes until combined. Cover the bowl and let rest for 20 minutes to autolyze.

Step 3
Add the remaining 230 g bread flour in 3 parts (or it will fly out of the mixer). Mix for 8 minutes on low speed.
Step 4
Remove the dough from the mixer, roll into a ball, and proof in a warm area until doubled in size, about 1 hour.
Step 5
Punch the dough down, roll it into a log and divide into 16 equal pieces.
Step 6
Roll each piece into a thin strand, and tie it into a knot. Place on a baking sheet to proof for another 20-30 min.
Step 7
Preheat oven to 400 F.

Garlic Butter

Step 8
Meanwhile, mince a head of garlic and combine in a pot with melted butter and salt (or Dan-O's Cheesoning). Remove once fragrant.

Bake and Finish

Step 9
Bake the garlic knots at 400 F until golden brown (about 15-20 minutes). Then remove from the oven and toss in the garlic butter mix along with chopped parsley.
