2wholemeal tortilla wraps

2 ½ Tbsptomato puree

1 tspextra virgin olive oil

1 tspdried oregano

½ tspgarlic powder
crushed

1 handfulspinach
roughly chopped

0.5red pepper
small, finely diced

6button mushrooms
sliced

0.5red onion
small, finely sliced

80gmozzarella cheese
grated

2 handfulsparmesan cheese
finely grated

1 handfulfresh basil
thinly sliced, optional
Instructions

Step 3
Preheat the oven to 200°C or 180°C fan.
Step 4
Mix the tomato puree, olive oil, oregano, and garlic together until well combined.
Step 5
Place the tortillas onto a non-stick baking tray. Spread the tomato mixture onto the tortillas evenly.
Step 6
Add the spinach, mushroom, red pepper, red onion and cheeses. Season with salt and pepper and bake for 8-10mins, or until the cheese is melted. Cover with fresh basil, if using.
