Instructions
Step 1
Crush garlic; combine 1/2 of the garlic with beef, rice, egg, oregano, salt, pepper in a large bowl. Shape into small balls (size of meatballs is up to you).
Step 2
Sautée onion with other half of garlic in oil in a large pot until tender.
Step 3
Mix in tomato paste, add beef broth with salt and pepper and bring to a boil.
Step 4
Add meatballs and reduce heat. OPTIONAL: You can add macaroni at this point into the pot, or cook separately.
Step 5
Cook on a simmer until meatballs are cooked, about 30 minutes.
Step 6
Add chopped parsley at the end. Enjoy!
