For the MEATBALLS

2chicken breasts

1egg

3 tbspsbreadcrumbs

salt

pepper

1 teaspooncurry powder

1 teaspoonpaprika

100gpizza mozzarella

olive oil
For the SAUCE
Instructions
Step 1
In a blender, add chicken breast, egg, breadcrumbs, salt, pepper, curry powder and paprika. Blitz everything for 30 seconds.






Step 2
Scoop out 2 tablespoons of mixture, form a meatballs with your hands, and 1 cube of pizza mozzarella in the middle and repeat.

Step 3
Cook your cheesy chicken meatballs in a pan over medium low heat with a drizzle of olive oil for 15-20 mins or until fully cooked (I suggest to cover the pan with a lid so the inside of your meatballs will cook properly and turn them to the other side halfway).



Step 4
Remove your cooked meatballs from the pan then deglaze the pan with some white wine.

Step 5
When the alcohol has completely evaporated (it will take approximately 90 seconds), add heavy cream, cream cheese, salt, pepper, freshly chopped parsley and curry powder. Simmer for 5 mins.






Step 6
Serve your chicken meatballs with some of your cream on top and some fresh chopped parsley. Buon appetito!
