Instructions
Step 1
Line a half-sheet with parchment paper. In a small bowl, mix salt, cumin, cayenne, cinnamon, and orange peel. Set aside.
Step 2
Place the nuts in a 10-in cast iron skillet over med heat. Cook, stirring frequently with a wooden spoon or spatula until pecans begin to brown and smell toasted, 4-5 min.
Step 3
Stir in spices until just fragrant, then add butter and stir to melt. Add the sugars and mix thoroughly before adding the water. Stir until sugar completely dissolves and nuts look glazed, 2-3 min.
Step 4
Spread the nuts on the sheet pan and spread so that nuts do not form clumps. Cool completely before storing.
