Ingredients

1 headkale
shredded, 1 buy the pre-shredded bag
1 packageFarro
2shallots
thinly sliced
1sweet potato
large, peeled and cubed
3chicken breasts
1apple
chopped
candied pecans
Roughly chopped
crumbled goat cheese
Flaky Sea Salt
1 tspsmoked paprika
1 tsponion powder
1 tspdried thyme
cayenne pepper
salt
pepper
1 tspdijon mustard
1 tspwhole grain mustard
1 tblmaple syrup
2 TBLapple cider vinegar
2 tblolive oil
salt
Instructions
Step 1
Preheat oven to 425 degrees.
Step 2
Add sweet potatoes to a lined baking sheet with a drizzle of olive oil and some of the spice mix (measure with your heart). Roast in oven for about 20-25 minutes or until the potatoes are tender and start to char.
Step 3
Drizzle chicken with olive oil and rub in.
Step 4
Season chicken with spice mix. Add to lined baking sheet and roast for 15-20 min or until internal temp is 165 degrees. Cut into cubes after slightly cooled.
Step 5
Cook farro according to directions. I always cook grains in chicken stock.
Step 6
Add kale to bowl with a TBL of dressing and massage. Add the rest of the ingredients and serve!
