Instructions
Step 1
1. In a medium mixing bowl, whip together egg yolks and sugar until pale & fluffy.
Step 2
2. Warm 3/4 cup of cream and salt on stovetop on low heat (don’t let it boil).

3. While whisking the egg mixture, slowly pour in the warm cream.
Step 4
4. Pour the egg and cream mixture back into the saucepan, constantly whisk and heat until it thickens slightly (about 3-5 mins).
Step 5
5. Remove from heat and add in the chocolate and vanilla. Stir until chocolate has melted.
Step 6
6. Pour mixture into a bowl, cover and chill for about 40 minutes. Stir mixture every 10-15 minutes.
Step 7
7. Whip remaining cream until very stiff peaks form.
Step 8
8. Fold whipped cream into chocolate mixture until combined.
Step 9
9. Place in serving dish, cover and chill for 2 hours before serving.
