Instructions
Step 1
slice eggplant lengthwise in 1/2 inch thick slice and place in colander with 1 tsp salt. toss to coat and drain for 30mns minimum. press to remove moisture.

preheat oven to 350
Step 3
Cook onions until slightly brown then stir in cinnamon, oregano, pepper and some salt and cook briefly.
Step 4
add lamb and crumble it while ot cooks for about 5 mns. Add wine and pasta sauce and simmer 5 mns.
Step 5
oil deep 9" pan and spread panko in bottom. Place half of eggplant slices on top and pour meat mixture over eggplants. Place remaining eggplants on top and pour alfredo sauce over. If desired sprinkle with parmesan.
Step 6
bake 40 to 45 mns until eggplant is tender and top has browned. Cool 10 mns before slicing.
