Instructions

Step 1
Preheat oven to 160
Step 2
Chop courgettes on half and then into wonky triangles. Add garlic, courgettes and oil to an oven proof dish
Step 3
Slow cook courgettes for 35-40 minutes covered. Then an additional 10 minutes uncovered. Once cooked, squash down with a fork. Drain some of the oil if desired.
Step 4
Add the butter beans and their tin juices along with two tablespoons of the cashew cream. No need to reheat. Top with a nutty breadcrumb mix and fresh basil.
Step 5
To make bread crumb: Blend a slice of bread with silver almonds (or pepitas). Fry in some oil with salt, pepper, and garlic powder
